Here's the Scoop

Use a scooper with a release mechanism.
Start at the Tub wall and move scooper in a circular motion spiraling toward the center of the tub.
Rotating the tub as you scoop makes it easier to serve.
Always scrape the Ices (No Dipping) pushing down no more than 1/2 - inch at a time.
As you scoop, always keep the product level in the tub, never leaving product on the walls of the tub.
This allows you to serve the best ices, always fresh.
